The Wines

Mâcon Milly-Lamartine 2023, Albert Bichot RRP £22

Located west of the longest limestone secondary mountain ranges that stretches from Tournus in the north to Fuissé in the south, the vineyards of Milly-Lamartine occupy the westernmost slopes of the Mâconnais' vineyards. It is unique in that it is influenced by the coolness of the higher altitudes of the Haut-Mâconnais, of between 290 and nearly 400 m. The vines grown in a diversity of soil types (limestone, clay, marls) depending on the plots. Exposure varies too, ranging from northeast where it is cooler to southwest where the vines are more exposed to the sun. The name "Lamartine" was added to the name of the village of Milly in 1902 in honour of the famous poet, Alphonse de Lamartine, who was mayor of the village and owned an estate here.

Chablis 2023, Domaine Viviers, Lupe-Cholet RRP £25

The village of Viviers sits at around 300 metres, higher and cooler than much of the Chablis appellation, on Kimmeridgian soils at the eastern edge of the Paris basin: ancient clay and limestone laced with fossilised oyster shells, the same geological formation that runs north through Champagne and south to the Dorset coast. The domaine's elevated position brings a combination of altitude and soil that gives the wines an intensely Chablisienne character, all freshness and mineral precision. Domaine Viviers is part of the Lupe-Cholet portfolio within the Bichot stable, a house with 25 hectares of prime Chablis and Côte d'Or vineyards and cellars dating to the 13th century. Lupe-Cholet selects only the finest grapes for vinification, with hand-picking, gentle pressing and careful temperature control among the techniques used to produce an elegant, precise style. The 2023 vintage delivers Chablis as it should be: mineral, unadorned and fresh, making the argument for the appellation without needing to raise its voice.

Bourgogne Côte d'Or Chardonnay "Le Pavillon", Domaine du Pavillon, Albert Bichot RRP £28

Calcareous clay soil, 2.17 ha. Vines between 35 and 40 years old in the Côte d'Or, at the heart of winegrowing Burgundy. The additional geographical denomination "Côte d'Or" was created in 2017 to bring these exceptional terroirs into the spotlight, with stricter production regulations than standard Bourgogne wines: lower yields, same planting density as village wines, vineyards located exclusively in the Côte de Beaune and Côte de Nuits. The wine is crafted from grapes hailing from two plots in the village of Meursault, along the axis of an old road built by monks linking the hospital with the Cîteaux Cross. Handpicked and gently pressed. Fermented and aged on fine lees: 50% in stainless steel, 50% in oak barrels (20% new) for 10 to 12 months. White flowers on the nose, underscored by almond, hazelnut and a hint of honey. The palate is soft and round, with subtle mineral tautness and a fresh finish.

Bourgogne Hautes-Côtes de Nuits "Les Dames Huguettes" 2022, Albert Bichot RRP £30

A widely renowned Hautes-Côtes de Nuits Climat, located on a particularly well exposed plateau overlooking Nuits-Saint-Georges at altitudes between 300 and 400 metres. Calcareous clay soil (Jurassic rocks). Fermented in thermoregulated stainless steel vats for 18 to 20 days, then aged 40% in oak barrels and 60% in stainless steel for 12 to 14 months. The nose is floral, mineral and fruity (strawberry) with an underlying hint of menthol. Full-bodied, silky and well structured on the palate. Warm finish with notes of vanilla and candied fruit.

Nuits-Saint-Georges Premier Cru "Les Crots" 2016, Albert Bichot RRP £85

Nuits-Saint-Georges gave its name to the Côte de Nuits and is almost exclusively devoted to the production of red Pinot Noir wines. The appellation stretches across two communes: Nuits-Saint-Georges and Prémeaux-Prissey. The "Les Crots" Climat sits in the southern part of the commune. Its name, a dialectal variant of "creux" (hollow), refers to the relief of this very steep slope whose contour forms a significant hollow. Handpicked and sorted by hand on arrival at the winery. Fermented in thermoregulated wooden vats for 18 to 21 days, then aged in oak barrels (35 to 40% new) for 16 to 17 months. Intense notes of red fruit (cherry, strawberry, raspberry), spices and tobacco on the nose. Generous and full-bodied on the palate, with good balance, structure and a long, intensely complex finish.
